Kokorone × Azekura

  • A one-night-only collaboration between Japanese restaurant Kokorone and Azekura, celebrating the poetic beauty of Japan's 24 solar terms.
    This special evening centers on the seasonal theme of Kasumi Hajimete Tanabiku — "When spring mist begins to drift," the second micro-season of Usui.

    The culinary experience is led by Chef Kizuku Katayama, owner of Kokorone and recipient of the Bronze Award in the 15th "Cuisine Masters" program by Japan's Ministry of Agriculture, Forestry and Fisheries.
    Renowned for his deep respect and dedication to Japan's culinary heritage, Chef Katayama continues to explore the richness of Japanese food culture with pride and precision.

    The menu features expressive dishes that evoke the misty spring landscape of Mount Saho, including Amago trout grilled in miso Yu-an style, and a selection of wild mountain vegetables, river fish, and game meats.
    Highlights include smoked dishes that resemble drifting mist, sashimi of carp, bear meat stew (Kumazawa-nabe), and rice with char and butterbur sprouts — all crafted to awaken the senses to spring's arrival.

    To conclude, a delicate nerikiri confection inspired by camellia blossoms will be served.
